Tammy's Fresh Fruit Slaw
I love this salad because it's so pretty, and I can use any organic fruit that looks good to me at the local farmer's market. I shop there every Saturday morning . . . when I'm not sleuthing, of course.
Tammy's Nutritious Nibbles
SALAD INGREDIENTS
4-6 Cups Shredded Cabbage, depending on how much you like cabbage. Remember: It's good for you! You can buy pre-shredded cabbage, if you don't enjoy shredding. tee hee
4 Cups Fresh Fruit - You can use strawberries, peaches, blackberries, raspberries, nectarines, blueberries, apples, pears, melons, mangos, pineapple, or grapes - sliced or cubed as you like.
If you want to, you can add chopped nuts, crumbled blue cheese, or some fresh herbs from your spice garden. If you serve this to Savannah, leave out the blue cheese. She hardly ever refuses food, but she won't eat anything she calls "moldy." eye roll
DRESSING INGREDIENTS
1/4 Cup Olive Oil
1/4 Cup White Wine Vinegar
1 Teaspoon Light Color Honey - Adjust amount to sweetness of the fruit.
1 Tablespoon Finely Chopped, Fresh Basil (optional)
Dash of Sea Salt and Freshly Ground Pepper to taste
DRESSING DIRECTIONS
Whisk the dressing ingredients together in a small bowl. Set aside.
SALAD DIRECTIONS
Chop, slice, or cube fruit that is clean and dry.
Gently toss fruit and shredded cabbage together in a large bowl. Add any extras you've chosen, plus half of the dressing. Mix together until all is well-coated. Serve the rest of the dressing separately at the table.
Enjoy as your body soaks in all those good vitamins and minerals. Then go out and run a mile or two with all the energy it gives you!
